  Cabernet Sauvignon

 
The Cabernet Sauvignon is climatically more demanding than the Cabernet franc. In the climatic conditions of the Ticino, it has difficulty to reach a sufficient degree of maturity. Only good locations in the Valais seem to guarantee that it matures regularly. The yield of this vine must be less than 1 kg/m2. In case of over-production and poor maturity, the resulting wine is characterised by a tipical and unpleasant green sweet pepper taste.
