This is a vine that does not adapt everywhere. The conditions at Changins, while not being ideal, are nonetheless better suited for it than those of Leytron, where it was tried and then abandoned. Its particular aromatic qualities develop especially during the alcoholic fermentation. At the grape and must stages it is indeed impossible to distinguish it from the Traminer (Savagnin rose) that gives a far less fragrant wine. The Savagnin blanc, cultivated in the French Jura where it produces the “yellow wine”, is a non-aromatic version of the same vine.
