This is an interesting vine. Its regular fertility and the sugar-rich musts make it a sure winner. This vine has nearly completely replaced the Chasselas in the Alsace. Sometimes compared to the Auxerrois, the Pinot blanc has there become a classical coffee wine which, being neutral and full-bodied, is much appreciated by consumers. In our vineyards, it could find a place of choice in a few good locations where its lacking acidity is often reproached to the Chasselas. Harvested when its sugar content slightly exceeds 85º Oechslé, or in other words before it over-matures, it gives a balanced wine that slips down easily; pleasant to drink when young, it is also able to support a certain ageing. Beyond 92º Oechslé, the wine obtained is very rich and full-bodied and reminds somewhat of the Pinot gris.
